Gajar Ka Halwa

"Gajar Ka Halwa is a classic North Indian dessert made primarily with fresh carrots, milk, sugar, and ghee. To prepare it, begin by washing, peeling, and finely grating red carrots. In a heavy-bottomed pan, add the grated carrots along with full-fat milk and cook on medium heat, stirring occasionally until the milk reduces and thickens. Once most of the milk has evaporated, add Dhampure Desi Khand and continue cooking, as the mixture will loosen slightly before thickening again.

After the halwa reaches a rich, thick consistency, add ghee and cook further until it releases a glossy texture and aromatic flavor. Enhance the dish with crushed cardamom, chopped nuts like almonds and cashews, and optionally raisins for added sweetness. The halwa can be served warm for a comforting experience or chilled for a firmer texture."
