Thandai

"Thandai is a traditional North Indian beverage, especially popular during festivals like Holi and Maha Shivaratri, known for its cooling and refreshing properties. To prepare it, begin by soaking a mixture of almonds, cashews, melon seeds, poppy seeds, fennel seeds, and rose petals for a few hours. These softened ingredients are then ground into a smooth paste along with aromatic spices such as cardamom, black pepper, and saffron. This rich paste forms the base of thandai and gives it its signature flavor and texture.

In a separate vessel, chilled milk is sweetened with sugar or Dhampure Jaggery Powder and blended thoroughly with the prepared paste. The mixture is then strained to achieve a smooth consistency and enhanced with strands of saffron and crushed nuts for garnish. Served cold, thandai is both nutritious and invigorating, offering a perfect balance of sweetness and spice."
